Meet our Chef de Cuisine

Our Chef de Cuisine, Paul Marrocco, has over two decades of experience in the hospitality industry. Paul's career has taken him from roles as a dishwasher to a chef to general manager of a restaurant. At Events by RHC, he plays a pivotal role in menu engineering. Get to know him better!

WHAT INSPIRED YOUR CAREER AS A CHEF?

I love bringing joy to people – that’s my main inspiration for pursuing a career as a chef. I discover new sources of inspiration every day, though! Social media has been a great boon for culinary professionals worldwide, significantly increasing exposure for lesser-known individuals doing amazing work. I also adore cookbooks. I own more than 100, which might be overkill, but each page of each book ignites new ideas for me. The possibilities are endless!

WHAT’S THE MOST MEMORABLE EVENT YOU’VE WORKED ON AT EVENTS BY RHC?

At Events by RHC, we strive to make each event memorable for our clients and guests. That goal is always at the forefront of my mind. However, if I were to choose one event that stands out as personally memorable, it would be the holiday party we organized for Hallmark Channel at Peak. The production, the food we prepared, and a performance by Norah Jones created an incredible vibe! That event was truly special to me (I love their Christmas movies).

WHAT’S ONE THING YOU WISH PEOPLE KNEW ABOUT THE CHEF’S PROFESSION?

It’s called the culinary arts for a reason. Every time we put a dish forward, we are exposing ourselves to criticism. We’re also human, which means we are vulnerable. We get excited when you love our food, but we typically blame ourselves when you do not. We put in long hours and hard work. When burnout couples with anxiety, fragility is created. The moral is: be nice to people in the hospitality world.

WHAT’S YOUR FAVORITE DISH TO COOK, AND WHY?

I always answer this question the same way (all culinary professionals do): What’s your favorite thing to eat?

WHAT DO YOU ENJOY MOST ABOUT WORKING AT EVENTS BY RHC?

The growth that this company is experiencing is astonishing to me. I started here in February of 2022, and I have witnessed tangible evolution. It’s incredibly rewarding to have contributed to it!

ANY COOKING TOP TIPS?

Get a pot of water on the stove to boil. Don’t skip preheating the oven. Temper and rest your proteins. Use salt. Taste everything.
